Like all regional recipes, there are secrets and versions for Sicilian cannoli that vary from city to city or family to family: some choose to add cocoa and Marsala to the dough. Others use coffee or cinnamon to flavour the base! The ricotta cream, on the other hand, is almost always enriched with pieces of chocolate and the finished cannoli are often garnished with chopped pistachios, chocolate chips or candied fruit... in short, you are spoilt for choice as to how you decide to enjoy them! But the fundamental rule is one: cannoli must be filled at the last minute to enjoy all their crunchiness!
