Dario Pandolfo

Dario Pandolfo, from Milan, born in 91, surprises with a cuisine of character, characterized by the respect and enhancement of excellent raw materials selected by Sicilian producers, breeders, fishermen. His passion grows over the years and feeds on a lot of study and work.

He approaches cooking almost as a game, when as a child, together with his brother, he goes to his uncle’s restaurant. After graduating from the Hotel School, he attended the prestigious Alma Cooking School, led by the great Maestro Gualtiero Marchesi.

Dario’s debut in starred kitchens began at the age of eighteen, working in the most famous restaurants in half of Europe such as: Geranium *** in Denmark, Villa Joya ** in Portugal, Terra ** in Alto Adige, up to experience most important training course, that at the “St. Hubertus ”3 * Michelin, in San Cassiano in Badia.

Strengthened by the experience gained and guided by a great desire to return to his homeland, Sicily, Dario Pandolfo returns to Milazzo where since June 2020 he is the executive chef of NgoniaBay.

The Restaurant

Lively and contemporary, the fine dining proposal of the Ngonia Bay Restaurant is based on enhancing the immense gastronomic heritage of Sicily. Nature is the source of inspiration for the “territorial cuisine” of executive chef Dario Pandolfo who carefully selects the raw material through a chain of farmers, breeders, fishermen and producers who work in an ethical and sustainable way. A “natural” cuisine rich in flavors and colors that, with simplicity and great technique, manages to enhance each ingredient, from the simplest to the most refined, considering it equally important. The result is a surprising and exciting universe of flavors.
The contemporary design of the Winter Garden, where from the large and bright windows you can enjoy the green of the centuries-old trees that dominate the structure, is the perfect background for enjoying a taste experience in a refined and elegant setting. During the summer the restaurant moves to the panoramic terrace with a breathtaking view of the Tono bay. The interior and exterior spaces, created and furnished with the utmost care, blend to offer guests the perfect place to spend unforgettable moments.

  • The Salon

    Open all year, it offers Sicilian specialties and international classics. The elegant furnishings and the wonderful sea view that can be enjoyed from the large openings make the room a refined and exclusive environment. The menu offers a rotation of original and tantalizing recipes to be combined with the vast choice of regional, national and international labels offered by our cellar.

  • The Winter Garden

    Immersed in the lush greenery and surrounded by natural light for twelve months a year, our Winter Garden is the ideal place to drink tea with friends or to entertain a business meeting. If necessary, it can be equipped as a conference room or decorated for ceremonies of all kinds.

  • The terrace

    The Terrace dominates the surrounding landscape offering a breathtaking view of the castle of Milazzo, the Gulf of Patti and the Etna volcano. On the wooden parquet, an elegant bar and a large whirlpool tub with stone edges frame a luxurious living room. Sunset is the moment when the atmosphere reaches the peak of its magic and makes an aperitif with friends unique or the prelude to an evening in romantic company.
